Ring Bros. Marketplace’s kicks off its free healthy cooking series, on Jan. 13 with a discussion and cooking demonstration with whole grains.

The four-class series, presented by health coach Carol Terrio and Ring’s general manager and resident chef Don Fallon, is designed to help shoppers prepare healthier meals and educate them on health-related topics.

The classes run for four consecutive Thursdays from 6-7 p.m., and are free, open to the public, and require no reservations. Each class will consist of a lecture by Terrio, followed by a question- and-answer session, and will conclude with a cooking demonstration by Fallon utilizing the information highlighted by that week’s class.

The first class will feature a discussion on whole grains: what they are, their nutritional benefits, what is phytic acid and how to neutralize it, deceptive labels on whole grain breads, and comparing brown rice to white rice. The recipe for the class cooking demonstration will be beef and broccoli with ginger garlic sauce.

The Jan. 20 class will feature vegetables, and topics discussed will include the importance of vegetables in our diets, nutrient content of different vegetables, seasonality, organic versus conventional vs. local produce, and the importance of local produce as it relates to allergies. The cooking demo will be ratatouille.

The topic for the Jan.27 class will be “All about Salt.” The discussion will cover unrefined vs. table salt, the dangers of additives in salt, the importance of salt in diets, and quality brands. The recipe for this class cooking demo will be kombu with winter vegetables.

The final class on Feb. 3 is titled, “Understanding Fat,” and topics will include good fats vs. bad fats, butter vs. margarine, why fats are important, and what are the different types of olive oil. The recipe for the demo will be salmon teriyaki.

Terrio received her training to practice health coaching at the Institute for Integrative Nutrition, which is the only nutrition school integrating all the different dietary theories—combining the knowledge of traditional philosophies with modern concepts like the USDA food pyramid, the glycemic index, the Zone and raw foods. She received her Bachelor of Science degree from Providence College.

Fallon is the general manager and director of marketing for Ring Bros. He attended the Culinary Institute of America and cooked in a variety of restaurants.

Markets specializes in fresh produce, dairy, and grocery products; Harney’s Liquors provides a selection of wines, craft brews, and top shelf liquors; Dark Horse Beef and Deli offers all natural beef, chicken, cheese, and deli products; Spinner’s Pizza & Burrito prepares fresh gourmet pizzas, burritos, take home meals, and homemade desserts; Chatham Fish & Lobster offers fresh fish, shellfish, and lobster; Nata’s Noodles, together with Montilio’s Express, offer desserts, fresh-made pasta, and prepared gourmet foods.
