We all need a good rub now and then, and never is it more important than when cooking beautiful cuts of meat. Whether you are into grilling, BBQ, oven roasting, or plain old stovetop cooking, spice rubs can wake up the flavor in the food with very little effort on the part of the cook. I've written about Todd's Dirt before, the original Todd's Dirt and Todd's Crabby Dirt, both excellent rubs for a variety of applications. The newest is Todd's Bayou Dirt, a spicy Creole blend that is great on beef, chicken, pork, fish and seafood as well as in soups, stews and chili, and on vegetables and even jambalaya. I tried it on some simple chicken thighs that I roasted off in the oven. It summoned up memories of New Orleans and all the great Cajun and Creole food I've eaten over the years.
